Basic meatball recipe

This is another nutritious and easy to prepare recipe for children that has been used and recommended by our naturopaths at Melbourne Holistic Health Group.

The basic recipe is for meatballs, but we have provided you with some ideas on variations that might be suitable for more adventurous children, children with allergies, or fussy eaters.

Ingredients

500g of minced chicken/lamb/beef
½ onion finely diced
1 cup Fresh bread crumbs or cooked rice or cooked potato
1 egg lightly beaten
1 teaspoon of olive oil
Any combination of vegetables for example:
1 carrot grated
1 zucchini grated
¼- ½ cup of peas or corn kernels

You will need

1 large mixing bowl
1 small frypan
1 large baking tray


Method

Preheat oven to 180⁰. In a bowl place minced meat and vegetables and combine well. Sauté onion in olive oil until lightly browned , then add to meat and vegetables. Add bread crumbs/rice or potato and mix altogether (mix with hands). Add egg and combine. Make balls from dessertspoons of mixture and place on baking trays lined with baking paper. Cook for about 40 minutes or until cooked and brown.

Makes 24-30 meatballs

Can be frozen and reheated as needed.

Variations

Add ½ cup cheese for children who like more flavour
Some children like garlic- add 1 clove of garlic when cooking onion.
Fresh continental parsley finely chopped adds extra flavour.


Fish balls

Ingredients

White fish such as 6 flathead tails
1 zucchini grated
1 potato diced
½ to 1 cup of fresh breadcrumbs (made from a good quality bread in a food processor)
½ cup of cheese (cows or goats cheese)

You will need

1 medium sized saucepan with a steamer insert

1 medium-sized mixing bow

1 large baking tray

Method

Preheat oven to 180⁰. Steam potato and fish until potato is cooked. In a bowl combine fish and potato with zucchini. Add bread crumbs and cheese and mix together. Add egg and combine. Make balls from dessertspoons of mixture and place on baking trays that have been lined with baking paper. Bake for 30-40 minutes or until cooked and slightly browned.

Makes 24-30 meatballs
